5 T. butter divided, 3 T. and 2 T.
1/4 c. flour
1/4 t. salt and pepper each
dash nutmeg
1 c. heavy cream
4 oz. cream cheese
1 small onion
20 oz. frozen spinach, thawed and drained
1/4 c. beef broth
1/4 c. Parmesan cheese
Melt 3 T. butter. Stir in flour, salt, pepper and nutmeg. Whisk in cream and then stir in cream cheese. Increase heat to medium and whisk mix constantly until thick and smooth. Remove from heat.
In another skillet over medium high heat, saute onions in 2 T. butter until transparent. Stir in spinach and broth. Reduce to low and simmer for 8 minutes.
Mix spinach mix into cream mix and simmer until heated. Fold in Parmesan and serve.
Serves 8
