Sticky Molasses-Balsamic Spare Ribs

- 1 cup (scant) unsulphured molasses
- 1 cup balsamic vinegar, plus more for drizzling
- 2 teaspoons salt
- black pepper, to taste
- 3 pounds pork spare ribs in racks, trimmed
In a medium saucepan, combine molasses, vinegar, salt, and freshly ground black pepper. Bring just to a boil, whisking constantly with a wire whisk. Remove from heat and let cool. Place ribs in a large bowl and toss with molasses mixture. Cover and refrigerate for 4 to 6 hours. Preheat oven to 350 degrees F. Place ribs in a single layer on a broiler pan, meaty side up. Cover with aluminum foil and bake for 30 minutes. Uncover and bake for 1 hour or longer, until ribs are tender. Turn several times during baking. Remove pan from oven and place ribs on a cutting board. Cut between ribs. Place on a warm platter and sprinkle with more vinegar if desired.
