Hominy Casserole

- 1 pound ground beef
- 1 cup chopped green bell peppers
- 1 cup chopped onion
- 1 can (16 oz size) diced tomatoes
- 2 jalapeno peppers, seeded and chopped
- 1 jar hot taco sauce
- 1 tablespoon Worcestershire sauce
- 2 cans (20 ounce size) hominy, white or yellow, well drained
- salt and pepper, to taste
- 4 ounces shredded cheddar cheese, or more
Heat a large skillet over medium heat. Add the ground beef, bell peppers, and onion. Cook, stirring frequently, until the meat is no longer pink and the vegetables have started to soften. Add the meat and vegetables to the crockpot. Stir in the tomatoes, jalapenos, taco sauce, Worcestershire sauce, and hominy. Season to taste with salt and pepper. Mix well. Cover the crock pot and cook on low heat for 4 hours or until the ingredients are heated through. Turn the heat to high and sprinkle the top of the casserole with the cheese. Cover and cook until the cheese is melted, about 5 minutes. Serve hot.
