- 3 pounds pork back ribs
- 1 small onion, diced
- 4 cloves garlic, chopped
- 6 green chiles, seeded and chopped
- 1 lime
- 1 teaspoon Chinese 5-spice powder (or more to taste)
- 1 1/2 cup barbecue sauce
Preheat the oven to 250 degrees F. Line a roasting pan with aluminum foil. Using a table knife, carefully remove the silver skin from the back of the ribs. Place the ribs in the roasting pan, bone-side down. Sprinkle the ribs with the chopped onion, garlic, and chiles. Squeeze the lime juice over the ribs and then sprinkle the 5-spice powder over all. Cover the roasting pan with foil so a tight seal is formed. Place the pan in the oven and roast at 250 degrees F for 3-4 hours or until the meat is almost falling off the bones. Carefully turn the ribs over and place meat-side down. Brush the ribs with some of the barbecue sauce. Turn the oven to broil. Place the ribs back in the oven and broil for 5 minutes or until the barbecue sauce starts to caramelize. Turn the ribs over and brush with more barbecue sauce. Return the ribs to the broiler and cook for 5 more minutes for the sauce to caramelize. You can repeat this process if desired for more glazed ribs. Serve the ribs immediately with additional barbecue sauce, if desired.
