3 tbsp tomato paste
1 tbsp honey
3/4c. mayonnaise
2 tbsp thinly sliced chives
1 tbsp fresh lemon juice
1 tbsp seeded and minced sweet red cherry pepper (vinegar packed)
2 tsp freshly grated lemon zest
1 tsp prepared horseradish
/4tsp Tabasco sauce
1 hard-cooked egg, peeled and finely chopped
1 lb cooked, peeled and diced shrimp
Kosher salt and freshly ground black pepper
1/2 lemon
Potato chips

In a large bowl, whisk tomato paste and honey until smooth. Whisk in mayonnaise, chives, lemon juice, cherry pepper, lemon zest, horseradish and Tabasco sauce.

Using a rubber spatula, gently fold in egg. Add shrimp to bowl and toss. Season to taste with salt and pepper and a squeeze of lemon. Set a bowl of shrimp salad on a large platter, surround it with potato chips and serve. Serves 8 to 10.
