24 ounces macaroni
1/2 cup butter
1/2 cup flour
1 3/4 cups milk
1 cup sour cream
1/4 cup grated parmesan cheese
1/2 tsp each salt, pepper and dry mustard
8 ounces Velveeta cheese
1-2 cup shredded cheddar cheese

Preheat oven to 350. Prepare macaroni according to package directions. Melt butter in a large pan. Whisk flour into melted butter to create a light roux (paste). Slowly whisk milk into the roux, whisking constantly to avoid lumps. Allow milk and roux to heat for about one minute, then begin adding the sour cream, parmesan cheese and seasonings. Continue to gently whisk the sauce bubbles and starts to thicken.

After macaroni has cooked, drain the water from the pot and mix in the half the Velveeta until it melts. Toss with remaining Velveeta. Pour the sauce over the macaroni and mixed together, transfer to a 9 x 13 baking dish.

Bake, uncovered, for 1 hour or until bubbly. Sprinkle 1 or 2 cups of shredded cheddar cheese over the top and bake for 5 more minutes, or until cheddar cheese is thoroughly melted. Remove from oven and allow to cool for 5 to 10 minutes before serving.
