11/2 cups shredded Monterey Jack cheese or Colby Jack
1 (21/4 oz) can chopped black olives (for spicy, add or substitute chopped Jalapenos)
1/8 tsp red pepper sauce
1 ¾ lb ground beef
1/4 cup finely chopped onion (more, if desired)
1 tsp salt
1/2 tsp black pepper
6 hamburger buns
Combine cheese, olives and red pepper sauce; mix well. Divide mixture evenly and shape into 6 balls.
Mix ground beef, onion, salt and pepper; shape into 12 thin patties. Place a cheese ball in center of 6 patties and top each with a second patty. Seal edges of each patty to enclose cheese ball. Lightly oil cooking grid. Grill patties, on covered grill, over medium-hot briquettes 5 to 6 minutes on each side or until done. Split buns; brush with butter and place cut side down on grill to heat through. Serves 6.
