8 oz. pkg. cream cheese, softened
1 tsp. ground cumin
3/4 c. grated Mexican Cheese Blend
1/2 c. your favorite salsa
1/4 c. chopped scallions (white & light green parts only)
10 oz. pkg. frozen chopped spinach, thawed & thoroughly squeezed dry
1 c. fresh diced tomatoes (or used canned but drain them well)
Additional 1 1/4 c. grated Mexican Cheese Blend
Tortilla chips for serving

Preheat your oven to 350 degrees. Coat either an 8-inch square baking dish or 9-inch pie dish with cooking oil spray.

In a mixing bowl, beat the cream cheese and cumin together until well blended. Fold in items 3-7 until well combined. Spread mixture in your prepared baking dish. Sprinkle the additional 1 1/4 cups of the Mexican Blend Cheese evenly over top. Bake for 25 to 30 minutes or until bubbling hot around the edges. Serve dip warm or hot with tortilla. Serves 4-6
