2 lb pork tenderloin
Dijon mustard
1/4 cup oil
2 cloves garlic, each cut in 1/2
1/4 cup carrot and celery, chopped
1/4 cup lime juice and tequila
1 tbsp red chilies, ground
1 tsp salt, dried oregano and thyme leaves
1/4 tsp pepper
4 cups chopped tomatoes
1/4 cup chopped onion
1 bay leaf
1/4 cup snipped parsley

Spread mustard over the pork tenderloin. Heat oil and garlic in a skillet until hot. Cook pork until brown. Remove garlic. Stir in remaining ingredients except parsley. Heat to boiling the reduce the heat. Cover and simmer until pork is done, about 30 minutes. Remove the bay leaf and sprinkle with parley before serving. Serves 6
