3-ounces cream cheese, softened
1/2 cup ricotta cheese
2 tablespoons fresh dill, or 1 teaspoon dried
2 tablespoons chopped green onions
1 tablespoon mayonnaise
2 teaspoons lemon juice
4-ounces cooked shrimp, chopped*
1/4 cup sweet red peppers, chopped
Old Bay Seafood Seasoning, or other of your choice
4 small tortillas, or 2 large
Lettuce leaves, optional
Place cream cheese, ricotta, dill, Old Bay, green onions, mayonnaise and lemon juice in a bowl; combine thoroughly. Stir in shrimp and red peppers.
Divide shrimp mixture among tortillas and spread to the edges; top with lettuce leaves, if using, overlapped to cover entire tortilla. Roll up tightly; cover and refrigerate for 1 hour to chill. Cut each roll crosswise into serving pieces and serve. Makes 6 servings
*NOTES - You can substitute crab or imitation crab for the shrimp. The curly leaves of green or red leaf lettuce are especially attractive in these pinwheels.
