3 cups flour
1 tsp baking powder
1/2 tsp baking soda and salt
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp ground ginger
1 1/4 cups milk
2 eggs, beaten
1 cup butter, melted
1 cup coarsely chopped cranberries and chopped and peeled apples
1/2 cup diced figs
3/4 cup chopped toasted and skinned hazelnuts
3/4 cup brown sugar and sugar
Preheat oven to 375. Sift dry ingredients in a large bowl. Make a well in center and add next 3 ingredients. Mix gently until batter is just moistened. Add remaining ingredients and mix must enough to evenly mix together. Spoon batter into greased muffin pan. Bake 15-20 minutes or until muffins rise and are golden brown.
