2 pints shucked oysters
3 tbsp butter
1 cup sliced mushrooms
1 clove garlic, minced
2 tbsp flour
3/4 cup milk
1/4 cup dry white wine
2 tbsp snipped parsley
1/2 tsp Worcestershire sauce
3/4 cups bread crumbs
1/4 cup grated parmesan cheese
1 tbsp butter, melted
Pat oysters dry. In a large skillet, cook and stir oysters in 1 tbsp butter for 3-4 minutes or until their edges start to curl. Drain and transfer to 4 (10 oz) casserole dishes.
Sauce: In the same skillet, saute the mushrooms and garlic in 2 tbsp butter until tender. Stir in flour and add the milk, stirring until thickened and bubbly. Stir in the next 3 ingredients and spoon over oysters.
Mix remaining ingredients and sprinkle over the sauce. Bake at 400 for 10 minutes or until the crumbs brown. Serves 4
