2 tsp sesame seeds
1 lbs fresh spinach, stemmed
1 tsp fresh lemon juice
1/2 tsp soy sauce
Pinch sugar
Pinch salt
2 tsp sesame oil
Bring a medium saucepan of lightly salted water to a boil. In a small heavy skillet, toast the sesame seeds over moderate heat, shaking the pan occasionally, until the seeds are fragrant, about 4 minutes. Add the spinach to the boiling water and blanch for 1 minute.
Drain, rinse with cold water, and drain again thoroughly; squeeze the spinach dry. Coarsely chop the spinach and transfer to a medium bowl.
In a small bowl, combine the lemon juice, soy sauce, sugar and salt. Stir in the sesame oil. Put this sesame dressing over the spinach and toss to coat. Let stand at room temperature until ready to serve.
Divide the blanched spinach and its sesame dressing among 4 small bowls or plates, sprinkle with the toasted sesame seeds, and serve.
