2-3 clove garlic, minced
2 tsp salt
1/2 tsp each dried rosemary and thyme
1/8 tsp ground allspice
1 (3 to 2 1/2 lb) pork loin roast, rolled and tied
Marinade: With the flat blade of a knife, press the garlic into the salt until pureed. Crush rosemary and thyme in a small bowl into a small bowl. Add garlic mixture, allspice and olive oil; mix well. Unroll the roast and brush marinade in a plastic bag. Close bag and place in a large bowl. Refrigerate overnight, turning occasionally. Bake, uncovered 325 for 1 1/2 to 2 hours or until meat thermometer registers 170 degrees. Remove the oven. Let stand 10-15 minutes before serving.
