3 tbsp diced Vidalia onion
3 tbsp butter
3 oz fresh crabmeat
1 (9 inch) pie crust, partially baked
1 tbsp parmesan cheese
2 cups grated Swiss cheese
4 eggs
1 cup heavy cream
1/4 tsp salt
Dash cayenne pepper
Saute onion in butter until tender. Add crabmeat and heat through. Sprinkle bottom of pie shell with parmesan cheese, then crab and onion mixture. Top with Swiss cheese.
Mix together remaining ingredients and slowly pour mixture over ingredients in a pie shell. Bake on top rack of oven at 375 until done, about 25 minutes. Let cool before slicing.
