3 medium butternut squash, halved and seeded
9 tbsp butter
1/2 cup Maple syrup
1/2 tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup chopped pecans

Preheat oven to 350. Place squash halves, cut side down, on baking tray. Bake for 45-60 minutes, until flesh is tender.

Remove from oven and scoop out flesh, reserving shell. Beat the squash with 6 tbsp. butter, syrup, cinnamon and nutmeg until light and fluffy.Fold in the pecans and then scoop mixture back into shells. Dot with remaining butter.

Return squash to oven and bake for 10-15 minutes, until hot. Serves 6.
