1 1/2 lb pork tenderloin
1/2 cup dry sherry
2 tbsp soy sauce
1/2 tsp pepper
2 cloves garlic, crushed
1/2 cup ground almonds
1 tsp olive oil
1 medium onion, chopped
1 carrot, peeled and diced
1 celery rib, chopped
In a resealable bag, add first 4 ingredients. Add pork, press out air and seal. Turn pork to coat. Marinade in refrigerate for 1 hour. Remove pork from marinade, reserving marinade; pat dry. Coat pork with almonds. Heat oil in a large skillet. Brown pork on all sides, about 5 minutes, turning carefully. Reduce heat to low, add reserved marinade and vegetables. Cover and simmer 10-12 minutes. To serve, slice tenderloin and serve with vegetables over hot cooked rice. Serves 6
