1/3 cup chopped onion
1/4 cup butter
1/4 cup flour
1 tsp salt
1/2 tsp. pepper
1 cup half & half
1 cup milk
2 cups cooked rice
1 cup crab meat
1/2 lb uncooked shrimp
5 oz can water chestnuts
1 cup shredded cheddar cheese, divided use
2 tbsp. chopped pimento
2 tbsp lemon juice
Preheat oven to 375. Saute onions in butter. Add flour, salt and pepper. Gradually add half & half and milk, stirring constantly over low heat. Stir in rice, crab meat, shrimp, water chestnuts, 1/2 cup of the cheese, pimento, and lemon juice. Spoon into casserole. Top with remaining cheese. Bake for 30 minutes.
