4 boneless pork chops about 1/2 inch thick
1/4 tsp ground sage
1 tsp salt
1/2 tsp pepper
1/4 cup minced onion
1/4 cup red currant jelly
1 1/2 tsp Dijon mustard
Combine the sage, salt and pepper. Season the chops with the seasoning mixture.
Spray a skillet with cooking spray and heat over high heat; add the chops to the skillet and cook 1 minute on each side. Reduce heat to medium and cook an additional 4 to 5 minutes per side. Remove chops to a platter, cover and keep warm.
Add onion to skillet and cook, stirring, for 2 minutes. Reduce heat; add jelly and mustard. Stir to combine and pour in the accumulated juices from the chops. Simmer for about 2-3 minutes until slightly reduced. To serve: Spoon the glaze over the chops and serve.
