6 oz semi-sweet cooking chocolate
1/3 cup milk
1/2 cup sugar
2 egg whites
1/2 cup heavy cream

Place chocolate in a double boiler, add milk and heat slowly until chocolate is melted. This mixture should be fairly thick. Stir in the sugar and let the mixture cool. Beat egg whites until stiff and fold into the chocolate mixture.

Whip the heavy cream and fold into the mousse and serve at once. Add more whipped cream if desired for a lighter consistency.

NOTE: Good served with seasonal fruits. Also good with a splash of dark rum or Kahlua in the mousse. Serves 4
