Dressing
1 egg
1/4 cup cider vinegar and sugar
1/2 tsp salt
1 tsp dry mustard
Dash cayenne pepper
1 tsp cornstarch
1/4 cup cream
1 tbsp softened butter
1/2 cup mayonnaise
Slaw
6 cups shredded cabbage
1 red and/or green bell pepper, seeded and shredded
1 medium onion, thinly sliced or 1 cup chopped green onion
2-3 carrots, shredded
In a saucepan, combine first 6 ingredients and whisk until smooth. Mix cornstarch and cream together and whisk into egg mixture. Cook over medium heat, whisking constantly until mixture thickens, about 1 minute. Remove from heat. Whisk in butter. Strain into a bowl and cool. Mix with mayonnaise
Combine slaw ingredients in a large bowl; pour over dressing. Mix thoroughly. Cover and refrigerate several hours. Mix again before serving. Serves 6-8
