2 lb ground beef
1 onion, chopped
2 tsp minced garlic
1 small can black olives, sliced, reserve some for topping
1 (4 oz) can diced green chili peppers
1 (10 oz) can diced tomatoes with green chili peppers
2 1/2 cups red taco sauce
1 (16 oz) can refried beans
12 (8 inch) flour tortillas
2 cups shredded cheddar cheese

Preheat oven to 350. In a skillet, saute beef, onion and garlic. Drain. Add olives and next 4 ingredients. Stir mixture thoroughly. Reduce heat to low and let simmer for 15-20 minutes. Spread a thin layer on bottom of a 4-quart casserole.

Start layering by Covering with a layer of tortillas, then meat mixture and some cheese. Continue layering until all tortillas are use, ending with a layer of meat and cheese on top. Sprinkle with reserved black olives. Bake for 20-30 minutes or until cheese is slightly brown and bubbly.
