3/4 cup butter, softened
1 (3-oz) pkg cream cheese, softened
1 1/2 cups sugar
3 large eggs
1 1/2 cups flour
1/4 tsp baking powder
4 tbsp dark rum, divided
1 cup caramel ice-cream topping
Creamy Vanilla Filling
1 (3.4-oz) pkg instant vanilla-flavored pudding mix
1 cup heavy whipping cream
1/2 cup whole milk
1/2 cup sour cream
1/4 cup confectioners sugar
Creamy Vanilla Filling: In a medium bowl, combine pudding mix, cream, milk, sour cream, and confectioners sugar. Beat until stiff peaks form. Cover, and chill for up to 2 days.
Preheat oven to 325. Spray a 10-inch loaf pan with nonstick baking spray with flour.
In a large bowl, beat butter and cream cheese at medium-high speed with an electric mixer until creamy. Add sugar, beating until fluffy. Add eggs, one at a time, beating well after each addition.
In a small bowl, combine flour and baking powder. Gradually add to butter mixture, beating until combined. Stir in 2 tbsp rum. Spoon batter into prepared pan, and bake for 30 to 45 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes. Remove from pan, and cool completely on a wire rack. Cut into 1-inch cubes.
In a small bowl, combine caramel topping and remaining 2 tbsp dark rum.
In martini glasses, layer cake cubes, Creamy Vanilla Filling, and caramel mixture, as desired. Serve immediately. Serves 2-4
