1/2 cup red wine and water
1 onion, peeled and sliced
2 tbsp shallots, chopped
1/2 tsp ground cinnamon
1 small bay leaf
3 sprigs parsley
1/2 tsp thyme
1/8 tsp salt and pepper
2 lb pork tenders, 1/2 inch slices
3 tbsp butter and vegetable oil
2 tbsp flour
1/2 cup chicken stock
2 tbsp brandy or red wine
Ina bowl, combine first 11 ingredients. Arrange meat slices in one layer in a shallow dish and pour marinade over, turning to moisten. Marinate 2 hours, turning once. Remove steaks from marinade and reserve marinade.
Heat butter and oil in a large skillet and brown steaks 2-3 minutes on each side. Transfer to baking sheet and set aside.
Strain marinade. Add flour to fat in skillet and cook on low heat, mixing until flour is lightly browned. Pour in strained marinade, chicken stock and brandy. Stir constantly with wire whisk and bring to a boil, stirring constantly until sauce is smooth and slightly thickened. Pour sauce over steaks and bake at 350 for 7-10 minutes. Serves 8
