4 boneless, skinless chicken breast halves
1 cup plus 2 tbsp teriyaki marinade, divided
1 (8 oz) can pineapple tidbits, drained
1/2 small red onion and red bell pepper, finely chopped
1 jalapeno pepper, finely chopped (optional)
1 tbsp chopped fresh cilantro
In a large reseable plastic storage bag, combine the chicken and 1 cup teriyaki marinade; mix well. Marinate in the refrigerator for 30 minutes, turning occasionally.
Meanwhile, in a large bowl, combine the pineapple, bell pepper, onion, jalapeno pepper, cilantro, and remaining 2 tbsp teriyaki marinade; mix well. Cover and chill.
Preheat the grill to medium-high heat. Remove the chicken from the marinade, discarding excess marinade. Grill the chicken for 6 to 8 minutes per side, or until cooked through and no pink remains. Serve the chicken topped with the salsa.
