1 1/2 cups rice, not instant
3 cups chicken broth
1 lemon
Parsley
Grate at least 2 tbsp peel from lemon. Set peel aside. Juice lemon and combine with butter, rice and broth. Bring to a boil; reduce heat to a simmer and cover. Simmer without peaking for 20-30 minutes or until liquid is absorbed. Stir lemon peel into rice. Sprinkle with parsley. Serves 6 Note: Good with any Greek food.
