Makes 6 servings.

3 T. butter
1 onion, minced
2 c. long-grain white rice
4 c. water
1/4 c. fresh lemon juice
2 T. salt
2 T. chopped fresh dill
1/2 tsp. grated lemon zest
1 tsp. chopped fresh parsley

Preheat the oven to 325F.
Melt butter in a heavy skillet over medium heat.
Add onion and rice; cook and stir until lightly toasted.
Stir in water and lemon juice, and season with salt and dill; bring to a boil.
Pour rice mixture into a 3-quart casserole dish.
Bake covered, at 325F for 1 hour. Garnish with lemon zest and chopped parsley.
