3 cups warm mashed potatoes
2 cups shredded mozzarella cheese, divided
1/2 cup sour cream
2 tbsp bacon bits, dried chives
1/4 tsp pepper

Preheat oven to 350. Coat a 3-quart casserole dish with cooking spray.

In a bowl, combine potatoes, 1 1/2 cups cheese, sour cream, bacon bits, 1 tbsp dried chives and pepper; mix well. Spoon mixture into a casserole dish and top with remaining 1/2 cup cheese. Bake for 25-30 minutes or until heated through and the cheese is golden.

Sprinkle with the remaining 1 tbsp chive and serve. Serves 6-8
