1 tsp plus 1/4 cup unsalted butter
2 1/2 lbs red potatoes, peeled and sliced 1/4 inch thick
1 1/2 tsp salt
1 tsp pepper
2 tbsp plus 2 tsp flour
1/2 lb shredded sharp cheddar and Monterey jack cheeses and/or Velveeta cheese
2 cups milk

Preheat oven to 350. Grease a 2-quart baking dish with 1 tsp butter. Put the potatoes in a large mixing bowl and add the salt and pepper. Toss to season evenly.

Arrange a layer of potatoes on bottom of dish and sprinkle with 2 tsp flour. Dot with remaining butter, then sprinkle with 1/2 of each cheese. Repeat layering, ending with cheeses. Pour milk and bake until golden brown and bubbly, about 1 hour. Remove form oven and serve.
