4 cups onions, finely chopped
1 cup parsley, peanut oil, green bell pepper, and celery, finely chopped
1 tbsp garlic, finely chopped
3 cups steak sauce
1/2 cup hot sauce or 3 cups ketchup and 2 tbsp cayenne pepper
3 tsp salt, to taste
1 cup Southern Comfort Liquor
1 lb andouille or smoked sausage
Sauce: Sauté vegetables in the oil until onions are tender. Add the garlic and cook a little longer. Add remaining ingredients and bring to a boil. Lower heat and simmer 2-3 hours. (Sauce makes ¾ gallon and can be kept in the refrigerator for up to 3 weeks.)
Slice sauce sausage into the 1/4-inch thickness and combine with 1 cup sauce. Heat well on the stove. Serve with small pieces of French bread or with toothpicks to spear sausage.
