MAKES 6 SERVINGS

3 cloves garlic, minced
1 medium yellow onion, diced
¼ cup minced fresh parsley
¼ cup minced fresh basil
1 teaspoon dry mustard
2 teaspoons Dijon mustard
2 teaspoons kosher salt
¼ teaspoon freshly ground black pepper
¼ cup olive oil
Juice of 1 lemon
2 pounds jumbo shrimp (16 to 20 per pound), peeled and deveined, with tails left on

Combine garlic, onion, parsley, basil, mustard's, salt, pepper, olive oil and lemon juice in medium-size bowl. Add shrimp and allow to marinate for 1 hour at room temperature or up to 2 days covered in the refrigerator.

Prepare grill. Dip a paper towel in vegetable oil, and using tongs, brush over grilling rack to prevent shrimp from sticking. Place shrimp on skewers if desired and grill about 1 ½ minutes per side. Do not overcook. Serve warm or chilled.
