About 2.5 pounds precooked ham
4 – 6 hardboiled eggs (1/2 peeled and diced, reserved)
1 cup mayonnaise (I use 1/2 Miracle Whip and 1/2 mayonnaise)
1 Tablespoon prepared mustard
1/4 cup pickle relish
1/4 to 1/2 cup onion
1/2 cup finely chopped bell pepper, any color or mixed
1/2 cup finely chopped celery

Mix the mayonnaise and mustard in the bottom of an adequately-sized salad bowl. In a meat grinder or food processor, add ham, onion, bell pepper, celery and the whole eggs into the salad bowl. Peel and dice eggs, Add the diced eggs into the bowl and fold in. If it looks or tastes dry, add additional mustard, mayo and Miracle Whip. Chill. Serve cold.
