Baked pie shell or chocolate crumb crust

Filling
1 envelope unflavored gelatin
1 cup water
3 egg yolks, well beaten
1/2 cup sugar or light corn syrup
1/2 tsp salt
1/2 cup smooth peanut butter
1/2 tsp vanilla extract
3 egg whites

1/2 cup heavy whipped cream
Melted chocolate, for drizzle

Soften gelatin in 1/4 cup water. Combine yolks, 1/4 cup sugar, 1/4 cup water and salt in top of a double boiler, blend. Add gelatin. Place over boiling water; beat constantly with beater for 5 minutes. Cool.

Place peanut butter in a bowl and remaining 1/2 cup water. Gradually beat until smooth. Add vanilla to egg yolk mixture; blend into peanut butter. Chill until slightly thickened, about 10-15 minutes.

Beat egg whites until frothy. Add remaining sugar gradually and beat until stiff. Fold into peanut butter mixture. Turn into pie shell. Chill until firm.

At serving time, drizzle the pie with melted chocolate and top with whipped cream.
