2 large potatoes, sliced 1/4 inch thick
2 tbsp olive and butter
1 large onion, diced
1 1/2 tsp garlic, minced
2 tsp parsley, chopped

Preheat oven to 400. Heat the oil and butter in a skillet. Add the onion and cook until soft. Add the garlic and cook for 2 minutes longer. Lightly oil a medium casserole dish and layer in the potatoes. Pour the mixture over the potatoes. Cover and bake for 1 hour. Serve warm garnished with parsley. Serves 4
