6-8 sweet potatoes, peeled and cut into 1” pieces
1 cup brown sugar
1/2 cup butter and honey
1 tsp grated nutmeg
1/4 tsp allspice
1/4 cup bourbon or dark rum
1/4 cup chopped pecans, toasted, optional
Marshmallows, optional

In a large skillet, melt butter. Add brown sugar and heat until syrup is formed, about 3-5 minutes. Stir constantly. Add chopped potatoes, spices and honey. Toss until syrup coats most of the potatoes. Cover and simmer until tender but still firm. Turn potatoes occasional to cook evenly. Remove potatoes from liquid and set aside.

Add liquor and heat over high heat until it begins to thicken, then pour juice over the potatoes and keep warm. Mix in pecans. Add marshmallows at this point and bake at 450 for 15 minutes or until is starts to burn brown. Serves 6-8

Variation For Drunken Yams: Leave out honey, nutmeg and allspice, nuts and marshmallows. Substitute bourbon or rum for tequila and add juice of 2 limes.
