1 cup onion
1 cup catsup
1/2 cup water
1/4 cup EACH fresh lemon juice, red wine vinegar and Worcestershire sauce
2 tsp brown sugar
1 tsp prepared mustard
1/2 tsp EACH ground cumin and kosher salt, black pepper
1/4 tsp liquid hot pepper sauce

Combine ingredients in a saucepan, over a medium flame bring to a boil, reduce heat, and simmer for 1 to 2 hours, until reduced by about one-third and thickened remove from heat. Puree in food processor or strain out onion, cool, cover and chill for 4-6 hours.
