10 large mushrooms, stems removed and chopped
2 cups water
1 lb chicken and boned chicken breast, cut into 1 inch strips
1/4 cup finely chopped green onions and red bell pepper
1/2 tsp salt, pepper and granulated garlic
1/2 tsp dried oregano, crushed
1/2 cup bread crumbs
In a saucepan, boil chicken and cook 5 minutes; remove chicken; reserve 1/2 cup stock. Place chicken in food processor and finely chop. Spray skillet with cooking spray and place over high heat. Add chicken, vegetables, seasonings, and stems; saute for 10 minutes. Reduce heat, stir in reserved stock and cook for 10 minutes. Add crumbs and stir well. Remove from heat and let cool to the touch. Spoon into mushroom caps. Bake in sprayed baking dish and cover. Bake at 350 for 30 minutes.
