1 1/4 cups whipping cream
2 tbsp sugar
4 egg yolks, lightly beaten
1/2 cup sugar
2 (1 oz) squares semi-sweet chocolate
1 envelope unflavored gelatin combined with 1/4 cup water
1/4 cup cold water
1/4 cup Kailua
2 egg whites
1 (9 inch) pie shell, baked an cooled
Chopped toasted almonds

Beat whipping cream with sugar until stiff. Refrigerate for later. Combine yolks and sugar in a double boil over simmering water. Cook and stir until sugar dissolves. Melt the chocolate in the microwave, add water and stir until smooth. Stir in melted chocolate mixture into the egg yolk mixture. Cook and stir until it begins to thicken.

Add gelatin mixture and stir well. Remove from heat. Add Kailua. Place pan with mixture in a bowl of ice water to cool.

Beat egg whites until stiff peaks form, but do not over beat. When cooling chocolate mixture begins to thicken, fold in half the beaten whipping cream; then fold in the egg whites. Refrigerate the remaining whipped cream. Turn chocolate mixture into pie shell. Top with remaining whipped cream and nuts.
