4 large potatoes, cleaned and patted dry
1/4 cup grated parmesan cheese
3 tbsp chopped parsley
1/2 tsp paprika
1/4 tsp salt
1/4 cup butter
1 tbsp lemon juice
2 tsp lemon rind

Combine cheese and next 3 ingredients in a small bowl; set aside. Cut each potato crosswise into 1/4 inch thick slices, cutting to, but not through the bottom of potatoes. Allow potatoes to stand in ice water for 10 minutes.

Combine remaining ingredients and melted. Drain potatoes and pat dry. Arrange potatoes, cut side up, in a casserole dish. Brush tops and sides of potatoes with butter mixture and bake at 350 until potatoes are tender and basting occasionally with remaining butter mixture. Sprinkle potatoes with cheese mixture. Let stand, covered, for 5 minutes.
