1/3 cup olive oil
Juice of o lemon, about 3 tbsp
1 tbsp salt
1 tsp onion powder and garlic powder
1/2 tsp ground thyme, ground bay and pepper
2 lbs pork tenderloin
Simmer the mixture then let it cool before marinading the tenderloin in a resealable bag. Marinade up to 1 hour at room temperature. Remove meat from marinade and reserve to baste the tenderloin.
Prepare the grill for medium-hot coals. Arrange a grill rack at least 4 inches away from the coals. Brush the pork with olive oil and sprinkle with salt and pepper. Cook the meat to desired doneness,a bout 15-20 minutes, turning after 7 minutes, or until a meat thermometer reads 150 degrees and juices run clear. Let it rest on a heated platter for a few minutes before carving. Serves 6
