1/4 cup butter
1 cup finely chopped smoked pork butt or picnic roast
1/2 cup water
2 clove garlic, minced
1 tsp Worcestershire sauce
1 tsp dried sage
Hot sauce, to taste
Salt and pepper, to taste

In a saucepan, melt butter over low heat. Add pork and next 3 ingredients. Barely simmer mixture over low heat for 15-20 minutes or until liquid evaporates but pork is still moist. Remove from heat and mix in seasonings. Spoon mixture into a crock pot, cover and refrigerate at least until chilled, but preferably overnight. Let spread sit at room temperature for about 10 minutes before serving. Serve spread with crusty bread.
