8 eggs
1 cup baking mix
1 stick butter, melted
16 oz container low fat cottage cheese
8 oz shredded cheddar cheese
1 cup milk
11 oz can corn niblets, drained
Salsa and sour cream
Salt, pepper, and Tabasco to taste
Preheat oven to 350. Mix all ingredients together and pour into greased 9x13 inch baking pan. Bake for 40 to 50 minutes. Cut into squares and top square with salsa and a dollop of sour cream. This can also be baked in two round 9 inch cake pans; bake for 30 to 40 minutes and cut into slices.
