6-7 lbs whole snapper
1 box seasoned bread croutons
8 oz sour cream
1 medium onion, chopped
2 stalks celery, chopped
1/4 cup oil
Juice of 1 lemon

Take snapper, cut out backbone; season with salt and pepper inside of sigh. Saute vegetables until tender; pour over croutons. Mix in sour cream and lemon juice.

In a shallow pan, lay on 1 side of fish. Put second side of fish over stuffing, grease fish; lay bacon strips over top of fish. Bake about 1 1/2 hours at 375.
