1 EACH green and red pepper, and onion, finely chopped
1 tbsp garlic
1/4 cup butter
2 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1 (8 oz) pkg cream cheese, room temperature
1 (8 oz) container sour cream
1/4 cup parmesan cheese
1 (14 oz) can artichoke hearts, drained and rough chopped
Red pepper flakes
Salt and pepper, to taste
1 (8 oz) pkg Monterey jack cheese, shredded

Sauté onion, peppers and garlic in butter. Lover low heat, add remaining ingredients in order given (except Monterey jack cheese), mixing well; blending after each addition. Turn to microwave dish. Top with shredded cheese. Cook in microwave on HIGH 4-5 minutes, or until heated through.
