1/4 cup soy sauce and cider vinegar
2 tbsp honey and canola oil
10 large mushrooms, cut in half-and-half
2 green onions, minced
3 boneless, skinless chicken breasts, cut into chunks
1/2 lb sliced thick cut bacon, cut in half
1 (8 oz) can pineapple chunks
In a large bowl, combine first 4 ingredients. Stir in mushrooms, onion and chicken in mixture. Cover and marinate in the refrigerate at least 1 hour.
Wrap chicken chunks with bacon, thread into skewers. Alternate with mushroom halves an pineapple chunks. Arrange skewers on the grill and cook on high heat for 15-20 minutes, brushing occasionally with remaining soy sauce mixture until bacon is crisp and chicken is no longer pink and juices run clear.
