1/4 cup olive oil
1 large eggplant
1 medium onion, sliced
1 green pepper, diced
1/2 clove garlic finely minced
4 tomatoes or canned Italian solid pear shape, drained
Pepper
1 1/2 tsp salt
1/4 tsp pepper, basil, chives, parsley, tarragon and oregano
Sour cream

Pare and dice eggplant. Heat oil in skillet, add vegetables. Stir over low heat until eggplant is soft. Add tomatoes and spices. Simmer a few minutes. Turn in a casserole dish and bake at 325 for 40 minutes. Serve with sour cream.
