1 cup brown sugar
1 cup chopped pecans
1/2 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter, melted
2 large eggs, lightly beaten
1 tsp vanilla extract

Combine brown sugar, pecans, flour, powder and salt; make well. Combine butter, eggs and vanilla; add to well. Stir until just moistened. Spoon into muffin cups, filling 3/4 full. Bake at 425 for 8 to 10 minutes. MAKES ABOUT 2 CUPS OR 24 MUFFINS
