4 medium sweet potatoes, peeled, cut lengthwise into 1/4-inch strips
4 cups peanut oil
Salt to taste
Cayenne to taste
Soak sweet potatoes in ice water in bowl for 15 minutes; drain on paper towels. Deep-fry in peanut oil heated to 375-400 degrees in skillet until sweet potato strip begin to float to top or turn over. Drain on paper towels; sprinkle lightly with salt and cayenne. Serves 8
