Ingredients
Wet Ingredients
1 cup water
1/3 cup molasses (I used dark unsulphured)
2 1/2 tablespoons butter or margarine, softened
Dry Ingredients
1/2 teaspoon salt
1 tablespoon caraway seed or fennel seed, optional -- can add more to taste
1 1/3 cup dark rye or pumpernickel flour
2/3 cup whole wheat flour
1 2/3 cup bread flour
1½ teaspoons rapid rise yeast (2 tsp if your yeast is old)
Directions
Put ingredients in bread machine in the order suggested by the manufacturer and bake on whole wheat cycle, two-pound loaf, rapid rise yeast. I set it to light crust. If the crust isn't soft enough for your liking, try Basic bread mode instead of whole wheat. That also takes about an hour less time.
NOTE: There is a large amount of flour in this recipe. If the dough seems dry (check about 5 minutes into the cycle) or the machine sounds like it is struggling, add water 1 tablespoon at a time. The dough ball should feel like a baby's behind.

Faux Norwegian Rye bread (bread machine recipe)
I tried to make the Norwegian bread that Hannah from Texas posted, but got the ingredients mixed up. My husband really liked it anyway and suggested I post my semi-authentic pseudo-genuine Norwegian rye bread recipe here.
