- 10 medium carrots
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup orange juice
- 1/4 cup butter
Peel the carrots if desired. Slice the carrots or leave whole if they are small. Bring a pan of salted water to a boil over medium-high heat. Add the carrots and cook until tender. Drain well. Place the warm carrots in a heat-proof serving bowl. Stir together the brown sugar, cornstarch, ginger, and salt in a saucepan. Whisk in the orange juice and cook over medium-high heat for 1 minute, stirring constantly. Add the butter and cook, stirring constantly, for 1-2 minutes or until the sauce has thickened. Pour the orange sauce over the carrots and toss to coat them in the sauce. Serve immediately.
